Few dishes capture the flavour and theatre of Indian cuisine quite like Tandoori Chicken. Known for its vibrant colour, smoky aroma and beautifully spiced marinade, this much-loved grilled dish is a favourite across India, from family celebrations and festive meals to restaurant tables and outdoor gatherings.
Traditionally, Tandoori Chicken is cooked in a tandoor, a clay oven that gives the dish its signature char and deep smoky flavour. This easy BBQ-friendly version brings the same spirit to home kitchens and outdoor grills, making it a wonderful recipe for anyone looking to experience a taste of India in a simple, approachable way.
Ingredients
- 500 g chicken drumsticks or chicken thighs
- 200 g plain yogurt
- 1 tbsp lemon juice
- 1 clove garlic, crushed
- 1 tsp freshly grated ginger
- 1 tsp paprika powder
- ½ tsp ground cumin
- 1 tbsp vegetable oil
- Salt and black pepper, to taste
Method
In a large bowl, combine the yogurt, lemon juice, garlic, ginger, paprika, cumin, vegetable oil, salt and black pepper. Mix well to create a smooth, aromatic marinade.
Add the chicken pieces and coat them thoroughly, ensuring the marinade covers every side. Cover the bowl and refrigerate for at least 2 hours. For the best flavour and tenderness, marinate overnight.
Preheat the BBQ or grill to medium-high heat. Place the chicken on the grill and cook for 25–30 minutes, turning regularly, until the chicken is cooked through and lightly charred on the outside.
Allow the chicken to rest for a few minutes before serving. Enjoy it with a fresh salad, warm flatbread, steamed rice or a cooling yogurt dip.
A Taste of India
Across India, Tandoori Chicken is more than just a grilled dish. It is part of the country’s shared dining culture, often enjoyed during celebrations, festive occasions and relaxed family meals. The yogurt in the marinade helps keep the chicken tender, while the spices add warmth, colour and depth.
For a more authentic touch, cook the chicken over charcoal. The gentle smokiness brings the dish closer to its traditional tandoor-style flavour and adds a memorable sensory element to the experience.
